Dinner dates can be romantic when you both go to one of your favorite restaurants and taste those dishes that you both love. However, the restaurant does not always provide the sensual and warm environment of the home where you can both enjoy more of each others company.

If you are into Indian food, instead of ordering a takeout from your nearest Indian restaurant, why not prepare this simple dish that takes no more than 30 minutes to prepare. You will not only impress your date but it will save you plenty of money too. *Prices vary from location to location.

Shrimp Spinach Curry

Here are the key ingredients you need:

Two packs of frozen chopped spinach (Green Giant or other) $2.50
Half pound peeled and tail-off shrimp (cooked or uncooked) $4.50
Two cups rice (preferably basmati but any will do) $1.00

Onion (1)
Vegetable Oil (3 tbsp)
Garlic (4 cloves)
Ginger (1 tsp ground)
Chilli Powder (half tsp)
Turmeric (qtr tsp)
Salt (1 half tsp)
Cilantro (optional - 5 stems with leaves off)
Thai Chillies (optional - add according to heat) $1-2

Total: <$10

Fry the chopped onion along with the vegetable oil into a medium frying pan, stir until golden brown. Add the frozen spinach to the pan, lower the heat and cover for about 10 mins. Take a separate pan and add your basmati rice, rinse a couple of times and then add 1 cup water and bring to boil and cover. Rice cooker is the best way to prepare steamed rice, pls follow instructions of your rice cooker.

Once spinach has been reconstituted and become piping hot, add the remaining ingredients, garlic, ginger, turmeric, chilli and salt and Thai chillis (optional).

Cover and cook until the spinach is done (abt 5 mins)

Add shrimp and then cover (you may use frozen shrimp too, make sure to defrost first under flowing water and then pat dry) Cook further until shrimp is fully cooked (you can tell by watching the shrimp becoming opaque in color - white pinkish). Garnish with cilantro leaves and serve with hot steamed rice.

There it is, a simple and easy to prepare dish that any couple can enjoy!
